Yucca au Gratin

Yucca is a starchy root that is native to South America and has a delicious rich taste. It can be utilized in many recipes the same way as a potato!

Yucca au gratin quickly became one of Seattle Chef Emme’s family’s favorite starchy side for during the holiday season. This recipe is super simple and only requires 3 ingredients: yucca, heavy cream, and sharp cheese.

Beyond being tasty, yucca and dairy provide immune-supporting nutrients that are needed to boost our immune systems during the holiday season.


 

Yucca au Gratin

Ingredients:

  • 2 large yucca, peeled and sliced into thin slices (about ¼” thick) 
  • 1 cup heavy cream 
  • 2 cups grated sharp cheese 
  • Salt to taste 
Directions:
  1. Preheat oven to 350°F.
  2. Butter a baking dish with about 1 tbsp. of butter or oil.
  3. Arrange a layer of the sliced yucca in the baking dish and sprinkle some cheese over them and about ½ cup of the cream. Continue layering yucca, cheese and cream until you’ve used them all, finishing with a layer of cheese and cream.
  4. Bake for about 30-45 minutes, or until yucca is tender and golden brown on top.
  5. Let stand for 5 minutes before serving.
