Sorvete de Milho Verde (Sweet Corn Ice Cream)

Sorvete de Milho Verde, sweet corn ice cream, is one of Chef Emme’s favorite childhood treats. The idea of a sweet corn ice cream might sound strange, but they are a summertime favorite in Brazil. It is usually made with fresh (or canned) corn, heavy cream, and sometimes sweetened condensed milk. If you happened to catch her appearance on Chopped, you may have seen that one of the mystery basket ingredients was corn ice cream. She turned it into a sweet corn milkshake and won the Chopped Champion title!


 

Sorvete de Milho Verde
(Sweet Corn Ice Cream)

4 servings | Prep Time: 10 min 

Ingredients:

Directions:
  1. Remove the kernels from the cob. Chef Emme suggests using an angel food or bundt cake pan to make this easier.
  2. Blend sweetened condensed milk and corn kernels together until smooth.
  3. Whip heavy cream (local dairy preferred!) until it forms stiff peaks.
  4. Fold corn mixture into whipped heavy cream and pour into pan.
