Whether it’s Tuesday or another day of the week, these fajita tacos make for a delicious, healthy meal with ingredients from all five food groups! You can’t beat that.

This budget-friendly recipe is a great weeknight meal, whether you’re a participant in the Women, Infants, and Children (WIC) Nutrition Program or just on the hunt for a low-cost, easy meal! 

 


Fajita Tacos

Yield: adjust to desired servings | Time: 15 min 

Ingredients:

  • 1 can low-fat plain refried beans*
  • Fresh or pre-sliced bell pepper and onion*
  • Corn tortillas*
  • Shredded cheese*
  • Plain Greek low-fat yogurt*
  • 1 lime (optional)*

Directions:
  1. Slice peppers and onions into thin strips.
  2. Cook peppers and onions in pan until slightly softened. 
  3. Heat beans on stove for 6-8 minutes or in microwave. 
  4. For crispy tortillas, fold in half and toast in toaster. 
  5. Assemble tacos, top with shredded cheese and yogurt, and enjoy.
